Matt and Catharine of Hoss Soss, a craft hot sauce company from Salem, OR,  join the show to share the story behind their business.

In this episode we discuss how Hoss Soss grew from a homemade small batch hot sauce maker to a business with 3 globally inspired hot sauce flavors.

Matt & Catharine were living in Costa Rica when they decided to move back to the United States to build a hot sauce business. At the time, the couple planned to launch a company that could have them back on the beaches of Costa Rica within a few years.

The owners of Hoss Soss quickly realized how many moving pieces there are to starting a hot sauce business but they have embraced the journey along the way.

Matt & Catharine share lots of great insights and behind the scenes info into what it takes to grow a hot sauce business. The couple discuss the challenges of scaling their recipes for production with a co-packer, the time and effort it takes to build custom packaging for their hot sauce and what its like to get sauces into retail.

Hoss Soss currently offers 3 flavors, with a new flavor in development (we discuss it during the interview!).

The current hot sauce flavors are Guajillo (inspired by Costa Rican cuisine), Bibimbap (inspired by their favorite Korean dish) and Tamarind (inspired by Latin American flavors).

As people welcome a new virtual world in the Covid era, Hoss Soss is also pivoting their business to adapt to the change in the world. Matt, with his culinary background, is offering private virtual cooking classes through the company's website. The couple is also planning to host a Hot Sauce Industry Retreat in Costa Rica later this year!

When Matt Sutherland cooked in kitchens, he was nicknamed "Hoss" for his physical presence (Hoss was a character in the TV show "Bonanza" for all you youngsters). He decided when he and Catherine started their sauce company that he would pare the Hoss with Soss - and there you have it. Matt loves to teach others to cook as well. He teaches at the local Salem, Oregon high school, up on Oregon's Mount Hood and in Costa Rica, so he is amazing at spreading the word about good food. And Costa Rica has become a home, where he and Catherine offer a retreat for a dozen people to visit local food producers in a tropical paradise. Cheese, chocolate and pepper farms are the lure and Hoss Soss promises it is a lifetime memory. But let's talk about the sauce, or should we say Soss. Whether you need a soup base, want to spice up your tacos, noodles or leftover pizza, there are three flavors that bring both flavor and heat to all your foods.
