Mmm Mushrooms! The Nutritious Healing Food with Fungi Expert Jeff Chilton - Episode 22
Mmm Mushrooms! They're wondrous for both culinary and medicinal uses. Want more flavor? Cook with mushrooms! Want to replace meat? Use mushrooms! Want longevity? Eat mushrooms! In this episode, I discuss all of the ways that mushrooms are a nutritious healing food with Fungi Expert Jeff Chilton. Mushrooms are a "forgotten food" and can also be used as medicine to boost our immune system. I’ve definitely bought into the medicinal mushroom hype—as in latte boosters and health elixirs—so I got the insider lowdown on what type of "mushrooms" are really used in those fancy “medicinal mushroom” supplements. Maybe you bought some mushroom latte mix at the health food store. Guess what? Sometimes these products don’t contain the type of pure mushroom as it claims on the label. We also talk about one of the most prized medicinal mushrooms: Reishi. We also discuss Lion’s Mane, Chaga, Cordyceps, and Turkey Tail among the top healing mushrooms used in Traditional Chinese Medicine. Jeff highly recommends organic agaricus (button) and shiitake mushrooms, and we both agree that wood ear mushrooms are super tasty too! There are so many other species of culinary mushrooms--- portobello, chanterelles, morels, maitake, porcini, etc., but shiitake mushrooms are one that everybody should be eating because they have so many great benefits. Does this make you hungry for shiitake mushroom tacos? You'll find a bunch of tasty recipes for mushroom tacos on the Plantfull Kitchen blog to pair with this podcast episode: https://bit.ly/3gtl3tI I hope you enjoy my chat with Jeff as much as I did! He sure is a fun guy. You can find out more about mushrooms on his website: Real Mushrooms.
