I’ve been listening for a while and have enjoyed the show. I recently got into kegging and had some questions on the best way to force carbonation. I used google but there’s a million opinions online. I searched for an old episode of the Homebrew Happy Hour and sure enough found episode 61 from 18 months ago that gave me exactly what I needed to know on carbonation my first keg. Thanks Joshua, Todd and James. Keep up the good work.

Todd was out of town, James was still at the beach, Joe was running Homebrew Supply and I needed to record this week’s content a week early because, as you’re reading this, I am sitting on the sands of South Padre Island enjoying from Fruh Kolsch or Altstadt Alt (which is an incredible altbier but isn’t Schlussel… but I’m not bitter about it… no, really…)!

Fortunately, for us all, our buddy and long time homebrewer, Jason Chalifour, graciously joined me to help take your questions. Jason, as you may remember, also happens to be a sales executive with Muntons and so I’ve typecasted him as “the malt guy” and, again, he was nice enough to oblige. We catch up with what he’s been brewing, his set up, and we discuss a question on recipe building and choosing a base malt.

I had a ton of fun with Jason and really do hope to have him on again in the near future, especially since I hold grudges for so long and who knows when I’ll forgive Todd and James?!

It’s almost the end of January and Todd is still dry.

In case you haven’t been keeping up; Todd made a pledge to not drink a single beer (actually, to not have a single drink of any alcohol) for the entire month of January. Believe it or not, he’s kept to it which is way better than how I’m keeping up with my resolution to work out more and quit eating breakfast cereal for every meal. ANYWAY – We’re super proud of Todd but he has assured me that the first episode of February will be a wonderful return for him so we are definitely looking forward to that.

Many folks like to simplify their brew process and fermenting in a keg is an extremely common practice, but what about lagering in a keg? Do you lager/cold crash/cold condition your beers at all? Specifically, we discuss a question from a listener who transferred beer from one pin lock corny keg to a different ball lock corny keg and, mysteriously, it caused his beer to go completely flat! We also address a question about achieving clarity with your beer. Literally, making a clear beer – not some mental enlightenment achievement or something, although maybe we could address that too on a future episode?

Hey there, homebrewer!

Welcome back to our little homebrew podcast

I’d like to start this episode with praising today’s guest, Kenny Highman from “The Brewer of Seville“, for being an awesome interviewee and also a saint of patience!

In case you didn’t already know, we record this show earlier in the week and then after some touching up (i.e- automated audio processing to make us sound better than we really should), we then publish the show. In the 121 episodes of just this show that I’ve produced, we’ve maybe had bad enough technical difficulties or one of us will flub bad enough that we have to stop recording and fix the issue. I never (and I mean NEVER) really even bring that up with guests but before recording today’s show I happened to mention to Kenny that “in case we flub, we can stop and fix the issue. no worries because it NEVER happens!”… my subtle smugness would prove to be my downfall because poor Kenny had to hang out with me for over an hour just to produce the content for today’s show! The good news is that Kenny is a blast to hang out with and I am super happy that I got to know him better even thru all my technical difficulties and flubs.

Kenny, also know as The Brewer of Seville, joins me to talk about his homebrewing journey. This is another edition of our “Homebrewer Showcase” and the more I produce these episodes, the more I’m really enjoying them. Kenny hasn’t been homebrewing for a very long time but you can tell throughout this episode that he’s zealous for the craft and it’s exciting to see what he’s doing.
