Micah Melton was born and raised in Davenport, Iowa and began his studies in computer science before finding his calling in the culinary arts. While attending Culinary Arts school he began working in bars to pay the bills and fell in love with the beverage side of the industry.

Micah was part of the opening team that envisioned and created the opening menu at the Aviary. He studied and trained in the kitchen at Alinea restaurant for the opening of the new bar concept. His role at the time of opening was the 'ice chef' -- probably the only one in the world -- charged with creating over 30 types of ice for the bar program. The program now boosts an impressive 39 varieties of ice.

Micah currently serves as Beverage Director of the Alinea Group and is in charge of the cocktail, non-alcoholic, beer, and spirits menus at The Aviary & the Office Chicago, The Aviary & the Office NYC, Next Restaurant, Roister and Alinea.

The Speakeasy welcomes very special guest, David Wondrich this week who was born on the banks of the Monongahela and raised mostly in suburban New York City. After working as a house painter, a mattress stuffer, messenger, clerk and process server for a mob lawyer, bass player in more bands than he can count and a dozen other things, he settled down and earned a doctorate in Comparative Literature, specializing in Latin scientific poetry. That led to a job as an English professor, which he didn’t like. What he did like was writing about jazz and ragtime for the Village Voice and the New York Times and about cocktails for Esquire, a job he began in 1999 and is still happily performing today. Imbibe, his 2007 tribute to Professor Jerry Thomas, has become an essential text for bartenders and cocktail geeks alike. It is the first cocktail book to win a James Beard award. Punch, his 2010 follow-up, has helped refill the flowing bowl around the world. Tune in as David shares what he’s working on presently and more!

After a long career in pub-bartending while pursuing degrees in Art History and Graphic Design, Amanda Elder joined the opening team of cocktail bar Pouring Ribbons in 2012, and subsequently also began bartending at the East Village agave haven, Mayahuel. As former Creative Director at Pouring Ribbons, Amanda was responsible for designing the bar’s initial thematic menus (Route 66, Silk Road, Moody Authors) as well as spearheading Pouring Ribbons 80’s Night, a monthly reimagining of classic drinks from the 1980’s that welcomed a series of guest bartenders. She went on to join the bar teams at both Leyenda in Carroll Gardens, and Donna in Williamsburg. Amanda is currently a member of the spirits team at Skurnik Wines & Spirits in Manhattan where she focuses on spirits and cocktail education, as well as design. Amanda also continues to freelance in hospitality design.
