Agave spirits may have been around for hundreds of years, but it's only recently the bartenders and the public have embraced all the tequila and mezcal have to offer. While you might think that these liquids only have a few mainstay cocktails like the Margarita and the Paloma, author and cocktail writer, Robert Simonson wants to show you that the category and the cocktail are associated with it are much broader and more versatile than you probably thought. We talked to Simonson about his new book, mezcal and tequila Cocktails, the popularity of the category, and what you should be making in your home bar.
