Katherine Manning and Tung Nguyen and widely regarded as the restaurateur duo responsible for popularizing Vietnamese flavors in Miami at Hy Vong. The two met when Katherine, then a University of Miami grad student, volunteered herself and her home to help resettle refugees after the end of the Vietnam War. Their new memoir, Mango and Peppercorns (published by Chronicle Books), tells the story of their odd-couple friendship, their pioneering restaurant, and a refugee experience that’s as unique to them (and Tung’s daughter Lyn) as it is relatable to the countless refugees they call their neighbors.Katherine and Tung joined chef Michael Beltran at Ariete in Coconut Grove, a stone’s throw away from the home where much of their story plays out, to share some of their story and reflect one of the most consequential restaurants South Florida diners have ever known.[Editor’s note: there are portions of this interview that might be tough to hear. Tung is a Vietnamese-American podcaster, engineer, and musician.  He currently runs a podcast called Worksleeve which can be found on streaming services. In our conversation, Tung talked about the complexities of his own upbringing in rural South Dakota where his family's struggle to survive as refugees and navigating life in a mostly white community collided.  He talked about the time he left home at age 16, working odd jobs and would eventually attend college to pursue engineering. After completing his degree, Tung moved to Denver, CO in 2017 to begin his career in engineering and created Worksleeve, a podcast production company .Through Worksleeve, Tung has worked with companies to address their podcasting needs and also produced, engineered, and recorded several podcast shows. Tung is also the creator of Ruby on Jets. Jets is a Ruby Serverless Framework, allowing you to to create serverless applications with Ruby. It includes everything needed to build and deploy applications to AWS Lambda. Tung explains how Jets works and that even before AWS Lambda supported Ruby, Jets used a shim to run Ruby. The shim was written in a language that is natively supported by AWS Lambda and called out to Ruby. Tung describes this process using the dream in dream concept in the movie Inception. Since AWS Lambda has started supporting Ruby, Jets has since moved to the official AWS version of Ruby. They discuss Tung’s decision to open source Jets and his end goal with it. Tung explains he created Jets because he needed it, he wanted to run Ruby functions without managing a server. So by building tools like Jets he is able to help his clients and his consulting company. By open sourcing them, he is able to give back to the community. Tung talks about the development process of Jets and explains that he has already re-written Jets a couple of times.
