PFAS In Our Food, Our Bodies, and the Environment with Dr. Erin Baker
Foodie Pharmacology Podcast
What does the Manhattan project and your sandwich wrapper have in common? PFAS! These per- and polyfluoroalkyl substances are man-made chemicals invented nearly 80 years ago that are used in non-stick cookware, raincoats, water-proof boots, sandwich wrappers, take-out food boxes, microwave popcorn bags and more! Despite being linked to several cancers and other health hazards, they are ubiquitous in our modern food system. As “forever chemicals”, they enter the body and stay. I speak with Dr. Erin Baker, a chemist and expert in tracking down PFAS in the environment. She’s developing new untargeted mass spectrometry-based tools to hunt for these toxins in places like pine trees, alligators, water, and human blood. Healthier Food for the Masses featuring Erin Baker, Erin Baker’s Wholesome Baked Goods
Erin Baker is the President and Founder of Erin Baker’s Wholesome Baked Goods. Erin has turned her love of wholesome ingredients into a thriving business that hand bakes and distributes breakfast goods and snacks all around the country. Erin Baker’s® most famous offering and the genesis for the company is The Original Breakfast Cookie, created in 1994. A full meal in itself, Erin created the innovative concoction as a spin on the healthy oatmeal cakes her mother baked and sent her to school with every day. In addition to baking with integrity, Erin and her team give back to the community. For over 10 years, they have donated 10,000 breakfast cookies a month to 18 Boys & Girls Clubs in Western Washington. So far, they have donated 975,000 — and they're just getting started! In this episode…When you have a packed schedule, breakfast is usually one of the first things to get thrown off your agenda. If anything, people just grab a quick muffin or Pop-Tart on their way out the door. They have natural flavoring, so they’re healthy… right? Unfortunately, most “natural flavorings'' aren't as natural as they seem. Companies only have to meet a few basic requirements to be able to write “natural flavoring” on their labels. Most of the time, that natural flavoring is just oil and sugar — a combination that the average American palette has been conditioned to expect. While this may create tastier foods, it certainly makes them less nutritious. That’s why Erin Baker is busy creating wholesome baked goods like the Breakfast Cookie, so you can have a healthy start to your day — on the go. In this episode of the Gooder Podcast, host Diana Fryc is joined by Erin Baker, President and Founder of Erin Baker’s Wholesome Baked Goods, to discuss how she is offering a better-for-you breakfast for everybody. Erin tells the story of starting the company, how she is helping struggling youth in the Boys & Girls Clubs, and why she is passionate about ingredient integrity.
