As cooking has always been her passion, in 2004, Naomi started her own kosher personal chef business, The Aussie Gourmet, to pursue cater weekly and Shabbat/Yom Tov meals for families and individuals within The Five Towns and neighboring communities and beyond — including Alaska and Israel. Naomi is often sought after to give cooking demonstrations and produce kosher Chopped competitions throughout the New York/New Jersey Metropolitan as well as across the country, where she shares her immense enthusiasm for food. Naomi has her own cooking show on Kosher.com called Sunny Side Up. Naomi also hosts her own weekly show, “Table for Two with Naomi Nachman” on The Nachum Segal Network – which covers all food-related topics. Naomi Nachman, renowned caterer and cookbook author joins me in a casual conversations about food, Pesach, and how she went from teacher to best selling cookbook author. Get her Perfect Flavors cookbook or Perfect for Pesach cookbook. Naomi has provided us with a delicious salmon recipe that is simply put, perfect for Pesach. Pistachio Crusted Salmon ⅛ᵗʰ cup red horseradish⅛ᵗʰ cup mayonnaise1 cup shelled salted pistachios by @yumtee_nuts½ cup brown sugar2 Tablespoon lemon juice2 pounds salmon fillet (one whole side of a baby salmon) Mix the horseradish and mayonnaise together in a small bowl.Place the salmon on a large baking sheet lined with parchment paper.Spread the mixture over the fish and set aside. In a food processor crush the nut until they are course ground but not too fine. Add in the brown sugar and lemon juice and mix until it looks like wet sand. Pat nut mixture on top of salmon and bake for 25 minutes at 350 degrees. Prep ahead tip. This can be made in advance and you can freeze it right before cooking.
